Wheels: Best kept dry and cold. If moisture collects wipe it dry. Unwrap and store in a loosely covered box in the fridge (0–4°C) allowing the cheese to breathe. The wheels stay for up to 6 months. As they mature the wheels may shrink in size, get a harder crust and intensify in flavour.
Spreads: Store in the freezer (-18 °C) for up to 6 months, or in the fridge (0–4 °C) for upto 1 month.
